​I love cooking, but I will admit that sometimes I get frustrated,
especially when I'm trying to get a meal on the table at the same time
every day. This is a recipe that I've adapted to suit several different
menus. The only difference is the seasoning on the chicken and the sides.

I like rice as a side for this recipe. As it cooks, this recipe makes a great
sauce, so good with rice.

Ingredients
​
​
• ¼ tsp black pepper
​
• 1 tsp sea salt (check seasonings for salt content)
​
• ½ tsp smoked paprika
​
• ¼ tsp onion powder
​
• ¼ tsp garlic powder
​
• 1 tsp seasoning of your choice*
​
​• 1 lb. chicken breasts, cut into 1-inch pieces
​
• 1½ Tbsp of a good olive oil
​
• 2½ Tbsp butter, cut into cubes (½ Tbsp for greasing dish)
​

Preheat oven to 425°F. Lightly grease baking dish with ½ Tbsp
butter.

Instructions

1. In a small bowl, whisk together the first 6 ingredients.
​

2. Place chicken in the prepared baking dish in a single layer; sprinkle with
​
the ingredients in Step1. Drizzle with the olive oil and mix together
​
making sure to coat evenly. Dot with the 2 tablespoons of cubed butter.
​

3. Bake for 10 minutes; stir; continue baking for another 8 to 10 minutes or
​
until internal temperature reaches 165°F. For more color, place under a
close broiler for the last 2 minutes.

* You can use taco, teriyaki, Italian, Greek or poultry seasoning. I have also
tried a lemon butter seasoning and it worked great. I used Greek
seasoning for this recipe.
