Sweet Potato Pudding                                                4 to 6 servings

Ingredients

​

​

•  2 cups raw sweet potatoes, grated

​

•  1½ cups milk

​

•   ¾ cup sugar

​

•  1 egg

​

•  ½ tsp nutmeg

 

•  ¼ tsp sea salt

 

•  4 Tbsp butter, softened

​

​

Preheat oven to 375°F.  Greased casserole dish.

​

Instructions

​

​

1. In large mixing bowl, add milk and sweet potatoes (while grating to keep from turning dark)

​

​

2. Thoroughly mix in the remaining ingredients; pour into a casserole dish.

​

​

3.  Bake for about 45 minutes until browned.

​
