showers, and perfect for a wedding brunch! Since it's so colorful, a
footed glass or an individual compote would be a great way for it to
be served. Unlike a regular chicken salad, the ingredients give it
extraordinary flavor.
About the Ingredients:
• Chicken-I like to get the boneless, skinless chicken breasts for this
recipe. Cook then chicken the way you feel most comfortable.
• Rice-Choose your favorite but check out our ideas.
• Pineapple- The chunks are best; you want everything bite-sized. And
drain really well!
• Mandarin oranges-Try to get the ones in fruit juice or light syrup.
They give the best flavor in the salad. And drain well!
• Slivered almonds-Lightly toast at 350°F for the best flavor.
• Vinegar-Rice vinegar can be used for a milder flavor.

Ingredients
• ½ cup mayonnaise
• 2 Tbsp orange juice
• 2 Tbsp of a good salad oil
• 2 Tbsp white vinegar
• 1 tsp salt
• 5 cups chicken, cooked, ¾-inch dice
• 3 cups cooked plain rice*
• 1 can (15½-ounce) pineapple chunks, drained well
• 1 can (11-ounce) mandarin oranges, drained well
• 1 cup toasted slivered almonds
You will need a large sealable food storage container.
Instructions
1. In a large bowl, combine the first 5 ingredients; gently fold in chicken;
let stand 30 minutes for flavors to blend.
2. Add remaining ingredients; toss gently. It will store for up to 2 days.
* A good wild or brown rice will work; do not use sticky rice.
You could also use 4 cups of cooked, drained and cooled macaroni shells
instead of the rice.
