Baked Spaghetti with Bacon                                        6 servings

A different take on traditional spaghetti with meat sauce, but it is

equally delicious.  This recipe comes together quickly and is great

when you don't have ground beef handy.

Ingredients

•  8 slices bacon, ½-inch dice

•  1 small onion, ½-inch dice

•  ½ lb spaghetti

•  1 (9-ounce) can of diced tomatoes, any kind

•  ½ cup cheese (your choice), grated

•  ½ cup bread crumbs

Preheat oven to 350°F. You will need a greased 9-x-11 glass baking dish.

Instructions

1.   Fry bacon and onion until brown; add tomatoes; simmer for 10 minutes;

add grated cheese and simmer until it melts.

2.  Cook spaghetti (al dente) and drain according to directions on package.

3.  Add cooked spaghetti; salt and pepper to taste.  Lightly stir;  pour into

prepared baking dish.  Sprinkle with breadcrumbs.  Bake for 30 minutes

      until golden and bubbly.

Options

•  You could substitute Italian sausage (½-lb) for the bacon.

•  Add Parmesan cheese and 2 minced cloves of garlic to the bread crumbs

   before baking.

Recipes are like stories; they can change from person to person.  Everyone has their idea of how a recipe should be, even

though it may have changed from the original.  We will never know the true author of the original recipe, regardless of

what some may say.  That's why I go back and look through the oldest cookbooks that I can find.  Sometimes it's not the

recipe in the books that I find, but the tiny pieces of handwritten recipes and newspaper articles that are stuck within

the pages.  That's where the real story is, finding those simple Southern recipes.      -Mac
