Fresh Mushroom Soup
Yes, I know you can buy it in a can, but you can make it fresh in less
than 30 minutes.
Ingredients
• 1lb fresh mushrooms, cleaned, trimmed and chopped
• 1 small onion, ¼-inch dice
• 3 tbsp butter
• 3 tbsp flour
• 4 cups of a good beef stock
• 1 cup water
• 1 tsp salt
• 1 cup sour cream
You will need a large saucepan.
Instructions
1. Melt butter; cook mushrooms and onion until tender.
2. Sprinkle with the flour and cook about 2 minutes, stirring
constantly.
3. Stir in stock, water and salt; simmer about 10 minutes, stirring
often to prevent sticking to pan.
4. Just before serving, stir in sour cream and heat but do not bring
to a boil.
