Fresh Apple Cake
​
Apples are available year now so there is no reason not to bake this cake. It's such an easy-to-bake apple cake. Usually associated with the fall and winter seasons, this recipe is just too good to wait. It can be served plain, glazed, or with cream cheese icing. Whipped cream works well too. You can use a 9x13 baking pan, cupcake pans, or like in the picture-4 six-inch cake pans.

Fresh Apple Cake

Ingredients
​

• 3 eggs
​
​
• 3 cups sugar
​
​
• 1¼ cups vegetable oil
​
​
​
• 3 cups all-purpose flour
• 1 tsp salt
• 1 tsp baking soda
• 3 cups apples, ½ dice
• 1 cup chopped nuts

Preheat oven to 350°F. Oil or spray 9x13 pan.

Instructions

1. Thoroughly cream eggs and sugar; add oil mixing well.
​
​
2. Mix in flour, salt and soda. Stir in apples and nuts.
​
​
3. Pour into prepared pan and bake for about 45 minutes.
Cool in pan.

4. Ice and cut into 3-inch squares for serving.
​
